
Ingredients for about 10 broccoli balls
1 medium broccoli (about 400-500 g)
1 small egg
80-100 g about breadcrumbs
1 slice of cooked ham
50 g of cheese (asiago type, emmental, mozzarella, provola)
1 tablespoon of parmesan or grana
nutmeg
salt and pepper
Clean the broccoli by cutting the florets, wash and boil them in salted water for a few minutes.Drain, let cool and then reduce them with the help of a blender or a submersible mixer. In a bowl mix the pure broccoli with a whole egg, breadcrumbs, Parmesan, a pinch of nutmeg, pepper and salt until you get a soft mixture, if necessary add more breadcrumbs. Make balls, put a piece of cheese and ham in the middle and pass them in breadcrumbs. They can be cooked in a non-stick frying pan with very little oil, turning from time to time or in the oven, at 180° for about 15-20 minutes until golden.
